GF Fast Food Series: Cinnamon Sweet-Potato Sticks

Cinnamon Sweet-Potato Sticks

Same basic idea as the Oven-Baked Potato Fries!   These sweet sticks are so yummy that we often eat them as dessert.

Ingredients:
2 big sweet potatoes (yams work, but not quite as well)
1 tsp rice flour
a dash of salt
2 Tbsp. light olive oil 
2 Tbsp. butter (or coconut oil)

(to sprinkle on after baking)
1 tsp cinnamon 
2 tbsp. sugar 

Directions:
Evenly pour the oil onto a large baking sheet, lined with foil.  
Thinly slice sweet potatoes into wedge or 'fry' shapes.  
Toss the sweet potato pieces with the salt and rice flour (either in a freezer bag or on the cutting board).  
Place sweet potatoes on the oiled pan and place the pan in the oven at 400F--about 6-8 inches under the broiler.  
When the oven is preheated, switch to BROIL and check every few minutes to see if you need to turn them with a spatula.  Don't let them get too dark before turning.  Bake/Broiled until they reach your desired doneness--usually a nice golden brown.

When they're done, sprinkle them lightly with the cinnamon and sugar.  Serves 4 adults.
